I had stew meat on hand that I cut into bite size strips.
Boil a pot of water & cook a bag of egg noodles according to package.
While noodles are cooking sauté diced onions & garlic in a little butter or olive oil.
Add beef & sauté until cooked through.
Add sliced mushrooms & cook until tender.
Add a can of cream of mushroom soup & 8-16 oz low-fat sour cream. (Amount of sour cream depends on how much 'sauce' you want.)
Season with salt & pepper to taste.
Optional - add 2-3 crushed beef bullion cubes.
I mix the drained noodles in with the sauce & serve green beans on the size.
Definitely in no shape to cook...

I used the extra meat I had from the beef stroganoff, onions & the last of my big bag of red, orange & yellow peppers. Saute all together & season. Put in a soft tortilla & add shredded cheese. Top with a 2nd tortilla & put in a pan with a little melted butter until golden & cheese is melted. Toppers can include (but not limited to) sour cream, salsa, guacamole.
I used the Campbell's Slow Cooker seasoning sauce packets & it turned out pretty well. It said to just add chicken but I add bite size chunks of carrots too.
My dad is visiting from Ohio & he makes the BEST ribs we have ever had...the only ribs I eat. This time around he was teaching my oldest son how to make them so he can "carry on the family tradition." Hopefully they will turn out as good as his with just one lesson!
