For the homemade enchiladas sauce:
1 T oil
1 onion - minced in processor
3 cloves garlic
1/2 t salt
1 T chili powder
1 T cumin
1 T sugar
15-16 oz can tomato sauce
1/2 c water
pepper to taste
Heat oil in a sauce pan - add onion until translucent then garlic. Once softened add everything else & simmer on low until meat is ready - be sure to mix so it doesn't burn.
* I use my mini food processor to mince 1 1/2 onions (divided), then 6 cloves of garlic (divided), then 4 whole large carrots.
Season chicken with garlic powder, onion powder, salt & pepper, brown chicken in a little olive oil then put into slow cooker.
Add 1-2 jars of spaghetti sauce & 1 can of tomatoes w/ juice.
*Optional - add diced peppers &/or onions to crock-pot.
Cook 6 hours on low - serve over pasta & top w/ Parmesan cheese.
Time to clean out the fridge & I also had some pretzel dogs in the freezer that the guys wanted.
Fun & easy clean up meal.
Gently crush a single size bag of corn chips or Doritos.
Open the bag & add your toppings to the bag.
They can include (but not limited to:
- taco meat
- shredded lettuce
- diced tomatoes
- diced onions
- shredded cheese
- sour cream
Stir carefully & enjoy!
Super simple & quick
Boil cheese ravioli according to the package.
While boiling, heat a jar of alfredo sauce & add frozen peas.
After peas & sauce is heated through, stir in diced fresh tomatoes.
Serve over ravioli & top with grated Parmesan cheese.
